Grease is the one kind of kitchen dirt that refuses to stay where it was made. Crumbs land on the counter, spills land on the floor, and both wait politely to be wiped up. Cooking oil does not behave that way. Heat turns part of it into an aerosol fine enough to drift on a room's air currents, and it settles on whatever surface it happens to reach first — the cabinet door beside the range, the underside of the upper cabinets, a light fixture two metres away, the ceiling.

In Toronto that ordinary problem is sharpened by how our kitchens are ventilated. A large share of condo, apartment and converted-house kitchens run a range hood that never sends anything outdoors. It filters the air and returns it to the room, which means every bit of aerosolized fat the filter fails to catch comes straight back out and lands on the surfaces you are about to clean.

This guide maps the grease in a kitchen the way a professional cleaner does — cabinets first, then the hood and its filters, then the backsplash, the grout and the places nobody thinks to look — and matches each surface to a method that will not strip, haze or dull it on the way to clean.

Why Kitchen Grease Spreads So Far From the Stove

Health Canada is blunt about what happens when you cook: indoor particulate levels can run up to 65 times higher than background following cooking activities, with frying, deep-frying, roasting, broiling, sautéing, toasting and burning food the worst offenders. Steaming, boiling and microwaving generate far fewer particles.

Not all of that is grease, but a meaningful share of it is — fat that vaporised at the pan and condensed again on the first cool surface it met. Cabinet doors, painted walls, glass and stainless steel are all cooler than the air above a hot burner, which is precisely why they collect it.

The film that results is not inert. It stays slightly tacky for a long time and keeps catching whatever else is airborne: flour dust, drywall dust, pet dander, fibres shed by tea towels. A one-week grease layer is nearly invisible. A three-month layer is a brown varnish with dust bonded into it, and lifting that takes chemistry rather than elbow grease.

Which points to the single most useful thing to know about kitchen grease. It is far easier to remove early. Every month it sits, it oxidises further and grips harder, the cleaner you need gets stronger, and the risk to the finish underneath goes up with it.

The Toronto Condo Problem: Range Hoods That Recirculate

A national survey of roughly 4,500 Canadian households, published in the Journal of Exposure Science and Environmental Epidemiology, found that 90 per cent had some mechanical ventilation device over the cooktop. Only 66 per cent of those range hoods vented to the outdoors. Roughly one kitchen in three is running a device that filters the air and blows it back into the room.

There is a structural reason to expect that pattern to be at least as common here as anywhere in the country. Venting a hood outdoors means putting a duct through the building envelope, and in a high-rise that is a decision belonging to the building rather than to the unit. New condos are routinely delivered with recirculating hoods or over-the-range microwaves, and older houses carved into apartments often inherit the same arrangement — which is one of the reasons condo cleaning in Toronto has a different rhythm from cleaning a detached house with a ducted hood.

It helps to know what a recirculating hood actually does. Air is pulled through a metal mesh or baffle grease filter, which catches droplets by impaction, and then through a charcoal filter, which adsorbs odour molecules. The charcoal does nothing whatsoever for grease. Anything the mesh misses — and a loaded, unwashed mesh misses a great deal — exits the top of the hood and re-enters the kitchen.

The same Canadian survey found that only about 30 per cent of people used their ventilation device always or most of the time, and only 10 per cent were fully satisfied with it. Among households whose device recirculated, satisfaction fell to 7 per cent. Deep-frying prompted the highest usage; oven baking the lowest, with 47 per cent saying they rarely or never switch anything on for it.

The conclusion is not that recirculating hoods are useless. It is that in a large share of Toronto kitchens some grease will always escape into the room, so cleaning cadence — not ventilation — is the variable you actually control. The same logic governs air quality and HVAC in Toronto high-rises more broadly: when air cannot leave, what settles out of it has to be removed by hand.

Choose the Degreaser Before You Reach for a Cloth

In a kitchen it is a real advantage, because degreasers are the harshest chemistry most households own, and it means you decide exactly what enters your home, breathes into your air and touches the surfaces your food is prepared on. Four broad families of product will handle nearly everything in a residential kitchen. Matching the family to the surface is most of the skill.

Dish soap and hot water

The default, and correct far more often than people expect. Dish detergent is engineered for precisely this job: surfactants surround fat droplets and let water carry them away, while hot water softens the film so they can. For anything less than a few weeks old, on any surface, start here. It is also the only option that carries no realistic risk to a finish.

Alkaline degreasers

Purpose-made degreasers work at a high pH, typically somewhere between 10 and 13, and break fat down chemically rather than merely lifting it. They are the right answer for hardened, oxidised build-up on a hood, its filters and a tiled backsplash. They are also the products that cause damage: alkaline cleaners will etch and discolour bare aluminium, dull natural stone, strip oiled or waxed wood, and soften some painted and lacquered finishes. Wear gloves, open a window, and never let them dry on a surface.

Baking soda paste

Baking soda mixed to a paste with a little water is a mild alkali and a mild abrasive at once, which makes it useful for localised baked-on spots — the ring around a burner, a scorched patch on a hood canopy. The abrasiveness is gentle but real, so keep it off gloss paint, thermofoil and polished stainless, and work along the grain rather than in circles.

Solvent cleaners

Rubbing alcohol, and citrus or d-limonene based cleaners, dissolve grease rather than lifting it and then evaporate without leaving residue. That makes them excellent on glass backsplashes, sealed tile and stainless steel, where a streak-free finish is the point. They can soften some painted, lacquered and plastic finishes, so they are a poor first choice for cabinet doors.

Two rules apply whichever you choose. Never combine a chlorine bleach product with an ammonia-based one, in a bucket or in sequence on the same surface — the reaction produces a toxic gas. And always test an unfamiliar product somewhere hidden first: the inside of a cabinet door, or the strip of backsplash behind the kettle.

How to Degrease Kitchen Cabinets

Cabinets collect more grease than any other surface in the room, simply because there is more of them and because the doors flanking the range sit directly in the plume. The method depends entirely on what those doors are made of.

Painted, laminate and thermofoil doors

1. Wipe loose crumbs and dust off dry first, so you are not turning grit into a scouring pad.

2. Mix a few drops of dish detergent into warm — not scalding — water. Wring the cloth until it is barely damp. Water sitting in a seam is how thermofoil begins to lift at the edges.

3. Work one door at a time, top to bottom, following any grain or moulding line. Let the cloth rest a moment on stubborn spots instead of scrubbing them.

4. Rinse with a second cloth in clean water, then dry immediately with a third. Skipping the rinse leaves a soap film that starts attracting dust within days.

5. If a patch resists, step up to a diluted alkaline degreaser on that patch alone, keep it away from the door edges, and rinse it off within a minute.

Wood and stained cabinets

Real wood and stained finishes are less forgiving about both moisture and pH. Use the same dish-soap solution with even less water on the cloth, and dry each door the moment it is wiped. Avoid alkaline degreasers entirely on oiled or waxed wood, which will lift the finish rather than the grease. For hardened build-up on wood, a baking soda paste applied with a soft cloth, worked gently along the grain and removed quickly, is safer than any strong liquid.

The tops of the upper cabinets

If your cabinets stop short of the ceiling, the tops are almost certainly the worst grease in the house: an untouched horizontal surface sitting in the plume, often carrying years of accumulation bonded to dust. Do not start wet. Scrape the bulk off with a plastic putty knife onto a sheet of newspaper, vacuum the residue with a brush attachment, and only then degrease the remaining film. Laying fresh parchment or cabinet liner up there afterwards turns the next clean into swapping a sheet of paper.

How to Clean a Range Hood and Its Filters

A loaded grease filter is not only a cleaning problem. Statistics Canada, analysing fires reported across seven Canadian jurisdictions between 2015 and 2021, found cooking equipment to be the single largest cause of residential fires, accounting for 32 per cent of incidents and 43 per cent of injuries. A filter saturated with fat sits directly above an open flame or a hot element. Cleaning it is fire prevention as much as housekeeping.

Mesh and baffle grease filters

1. Switch the hood off at the wall or the breaker if you will be reaching into the housing.

2. Release the filter — most slide back and drop out of a spring clip — and check whether the manufacturer permits dishwashing. Stainless mesh usually tolerates a cycle. Bare aluminium mesh usually does not: dishwasher detergent is strongly alkaline and oxidises aluminium to a chalky grey that never comes back.

3. To hand clean, lay the filter in a sink or basin, cover it with water as hot as the tap will give, add a generous squeeze of dish detergent and a quarter cup of baking soda, and leave it 20 to 30 minutes. The soak does the work.

4. Brush both faces with a soft nylon brush, rinse thoroughly, and let it dry completely before it goes back. This is the step people skip, and a damp filter starts trapping fresh grease immediately.

5. Monthly is a reasonable interval for a kitchen that cooks most nights; every two weeks if you fry often or the hood recirculates.

Charcoal and carbon filters

These are the odour filters found in recirculating hoods, and they cannot be washed. Water destroys the adsorbent structure, and a rinsed carbon filter looks perfectly serviceable while doing nothing at all. Treat them as consumables: most manufacturers specify replacement every three to six months of normal use. If your kitchen smells of last night's dinner the following morning, the carbon filter is usually the answer rather than more cleaning.

The canopy, the fan and the light lens

With the filter out, the inside of the canopy and the fan blades become reachable. Spray degreaser onto the cloth rather than into the housing — you do not want liquid running toward the motor or the wiring — then wipe the interior surfaces, the blade edges and the light lens once it is cool. On a stainless exterior, finish with the grain and buff dry.

Backsplashes, Tile and Grout

The backsplash takes direct spatter as well as airborne aerosol, so it collects grease faster than the cabinets — but it is usually far easier to clean, provided you have identified the material correctly.

Glass, ceramic and porcelain

Fully non-porous and close to chemically indestructible. Warm water with dish detergent handles routine build-up, and alcohol or a citrus solvent on a microfibre cloth removes the last haze without streaking. Avoid abrasive powders on glossy glazes, which scratch more easily than they look.

Natural stone

Marble, limestone, travertine and some slates are calcium-based. Anything acidic — vinegar, lemon, most bathroom cleaners — will etch them, and anything strongly alkaline will dull them. The safe route is a pH-neutral stone cleaner, or the mildest possible soap solution applied with a soft cloth and dried at once. Oil that has soaked into unsealed stone is a stain rather than a film, and needs a poultice to draw it back out, not more scrubbing. Sealing is not optional behind a cooktop.

Grout lines

Grout is porous and sits slightly below the tile face, so it collects everything the tile sheds. A paste of baking soda and water, left on the lines for about ten minutes and worked with a stiff nylon brush — never wire, which scores the grout — lifts most kitchen grease. Rinse thoroughly, dry, and consider a penetrating sealer once the lines are clean and completely dry. The same porosity principle explains a very different Toronto problem, cloudy shower glass and mineral deposits, where the culprit is hard water rather than fat.

The Grease Nobody Goes Looking For

Once you start tracking the plume rather than the visible mess, a predictable list of forgotten surfaces appears. In a typical Toronto kitchen, roughly in order of how bad they usually are:

The ceiling directly above the range. Especially in a small condo kitchen with a low ceiling and a recirculating hood. It shows as a faint yellowing that only becomes obvious once you have cleaned one patch.

Light fixtures and pot light trims. Warm glass attracts the film and then bakes it on. Let them cool, and switch them off, before touching them.

The top of the refrigerator. Horizontal, warmed from below by the compressor, and permanently out of sight.

The sides and undersides of small appliances. The kettle, the toaster and the stand mixer all live in the splash zone.

The underside of an over-the-range microwave. The most-missed surface in the room, and frequently the greasiest.

The wall and floor beside the garbage bin. Here the grease arrives on the outside of packaging rather than through the air.

Chair backs, table edges and drawer pulls. Transferred by hands rather than by air, which is why they feel tacky long before they look dirty.

A Realistic Degreasing Schedule for a Toronto Kitchen

Frequency should follow how you cook, not the calendar. A household that fries or wok-cooks several times a week produces dramatically more aerosol than one that mostly boils, bakes and steams, and a recirculating hood leaves far more of it in the room. Adjust the following to match.

After any session with real frying: wipe the backsplash and the range surround while they are still warm. Ninety seconds now replaces twenty minutes later.

Weekly: the cabinet doors immediately flanking the range, the hood exterior, and the full backsplash.

Monthly: mesh grease filters, all cabinet fronts, small appliance housings, the top of the fridge, and the underside of the microwave.

Quarterly: inside the hood canopy and the fan blades, light fixtures and lenses, grout lines, and the ceiling above the range. Replace the charcoal filter if your hood recirculates and it has been three to six months.

Twice a year: the tops of the upper cabinets, the wall above them, and a full cabinet-interior clean. This is the pass most households never manage on their own, and it is exactly what a scheduled deep cleaning in Toronto is for.

When Kitchen Grease Becomes a Health Question

Health Canada lists cooking — particularly frying, grilling, sautéing, toasting and burning food — among the most common indoor sources of fine particulate matter, the fraction under 2.5 microns in diameter known as PM2.5. Particles that small travel deep into the lungs. Health Canada specifically flags children with asthma, whose breathing function is affected, and older adults, in whom fine particulate affects breathing, heart and blood function, alongside anyone with an existing respiratory or cardiac condition.

What is striking, reading Health Canada's own list of mitigation steps, is how much of it is simply cleaning: clean with a mop, a damp cloth or a HEPA vacuum; run the exhaust fan every time you cook; control humidity to prevent mould. Damp and HEPA methods matter because dry dusting and poorly filtered vacuums re-suspend fine particles rather than removing them.

Ventilation remains the first line of defence wherever it exists. Health Canada notes that running a range hood exhaust on high — around 300 cubic feet per minute — while cooking can reduce exposure to cooking-related pollutants by more than 80 per cent, and that the hood needs to extend fully over the burners to do it. That figure describes a hood venting outdoors. If yours recirculates, less of that reduction is available to you, and the cleaning routine has to carry more of the load.
